2500 years of history

The variety of wheat Timilia (TUMMINIA in Sicilian dialect) looks back on over 2,500 years of storia.Si said that it was even cultivated by Sumerians, certainly it was widely cultivated in Sicily by the ancient Romans. This wheat in the past centuries has been one of the most grains grown in the Mediterranean area and has had a remarkable expansion in Sicily since the time of ancient Romans, thanks to its adaptability to the most varied climatic and environmental conditions.

TIMILIA is a grain "late", could be sown in January in the maritime zones or even March in hilly ones to already be ready for harvest in June, was used for spring sowing which often farmers were obliged to resort to autumns too rainy or for raiding due to adverse peoples raids. This guaranteed feature in past centuries the "survival" of many families, much to earn him the nickname "wheat saves lives".

WHO WE ARE

Our brewery was founded in 2013 as "inevitable consequence" of the Fiorenza Family passion for home-brewed beer. To characterize the production, we focused on a rigorous selection of ingredients, by searching among the children products of our culture and our territory. The search for a connecting element in all our products, in addition to barley and hops of course, could only be a variety of typical Sicilian grain. The studies and researches have been long and arduous, and finally an extraordinary tenacity and passion made it possible to brew it with a grain with the back more than 2,500 years of history: the variety Timilia produced at our farm.
